There is a reason why you spend six weeks in culinary school just on eggs. Breakfast is an important meal and eggs are my favorite things to cook. I also like when I can start my day with a couple servings of veggies with my egg.
This recipe uses left over veggies from dinner the night before tossed with a handful of lettuce greens. Cook the egg however you like.
